Mycotoxins deplete cellular glutathione due to decreased gene expression of the enzymes needed to form glutathione and by altering mitochondrial membrane fluidity. Mycotoxin-related compromise of glutathione production can result in an excess of oxidative stress that leads to systemic tissue damage and illness. Some mycotoxins additionally utilize the glutathione detoxification pathway in the liver.
